I am lucky enough to be given these beef tomatoes for this recipe. I don’t see why you can’t use normal tomatoes that are larger than others tho. I used homemade paleo olive oil mayonnaise from Clothesmakethegirl. I never fail at this recipe and it is so good, the new cake batter for me :).
Tuna-Stuffed Tomatoes

Ingredients
- 4 large firm beef tomatoes
- 150g tin of tuna in olive oil (compliant tuna can)
- 2 hard-boiled eggs - peel them while they are warm.
- 1 small onion chopped finely
- 4 tbls of homemade mayonnaise from Clothesmakethegirl.com
- 1 tbls of finely chopped parsley
- sea salt
- pepper
Instructions
- Wash the tomatoes and slice off the tops, including the stems, for use as lids. Scoop out the core and seeds with a teaspoon carefully leaving the tomato hollow.
- Salt the inside of the tomato and turn them upside down on a sieve or surface to drain out liquid.
- Drain the tuna and flake it with a fork. Peel and chop the eggs while warm.
- Combine in a bowl the onion, tuna, egg, mayonnaise and parsley, sea salt and pepper to taste.
- Spoon the filling into the tomatoes, set the tops back on and arrange on a plate to serve.
- So cute and tasty!
