Tuna-Stuffed Tomatoes

I am lucky enough to be given these beef tomatoes for this recipe. I don’t see why you can’t use normal tomatoes that are larger than others tho. I used homemade paleo olive oil mayonnaise from Clothesmakethegirl. I never fail at this recipe and it is so good, the new cake batter for me :).

Tuna-Stuffed Tomatoes

Ingredients
  1. 4 large firm beef tomatoes
  2. 150g tin of tuna in olive oil (compliant tuna can)
  3. 2 hard-boiled eggs - peel them while they are warm.
  4. 1 small onion chopped finely
  5. 4 tbls of homemade mayonnaise from Clothesmakethegirl.com
  6. 1 tbls of finely chopped parsley
  7. sea salt
  8. pepper
Instructions
  1. Wash the tomatoes and slice off the tops, including the stems, for use as lids. Scoop out the core and seeds with a teaspoon carefully leaving the tomato hollow.
  2. Salt the inside of the tomato and turn them upside down on a sieve or surface to drain out liquid.
  3. Drain the tuna and flake it with a fork. Peel and chop the eggs while warm.
  4. Combine in a bowl the onion, tuna, egg, mayonnaise and parsley, sea salt and pepper to taste.
  5. Spoon the filling into the tomatoes, set the tops back on and arrange on a plate to serve.
  6. So cute and tasty!
