Just another lovely refreshing treat that we remember from our trips to Italy. Traditionally made with icing sugar but we used coconut sugar and loved it even more.
- 250g strawberries washed, halved, stemmed and hulled.
- juice of 1/2 a lemon
- 1 tsp of coconut sugar
- few leaves of mint
- Mix the lemon and coconut sugar in a small bowl until combined
- Place halved strawberries in a large bowl and top with the lemon mixture.
- Stir around until all strawberries are coated.
- Serve with mint.
