Revised Recipe of Pine nut Macaroons

- 100 grams coconut sugar
- 150 grams almond meal
- 2 egg whites
- 1/2 tsp vanilla extract
- 100 grams pine nuts
- In a food processor, process the coconut sugar, almond meal, vanilla and egg whites for a minute or so, until a smooth paste forms.
- Mix the whole pine nuts through into this mixture with a spoon and form walnut size mounds on a baking paper covered biscuit try.
- Bake in the oven at 160 degrees (320F) for 15-20 mins.
