Chicken in Lemon Sauce

  1. 6 chicken thigh fillets
  2. 1-2 Lemons squeezed
  3. 250 mls – Homemade Chicken Broth
  4. 125 mls – White Wine (optional) you could just use more chicken stock.
  5. 2 Tbs – Ghee
  6. Extra Virgin Olive oil
  7. 1 Cup – almond meal more if needed
  8. 1 Tbs- Parmesan grated (optional)
  9. 2 eggs
  10. 1/2 cup Tapioca Flour more if needed
  11. Ghee for frying
  12. Sea Salt
  13. Pepper
  1. Preheat oven to 180 degrees (350F)
  2. In a flat plate add the tapioca and mix in sea salt & pepper.
  3. In another flat plate add the almond meal and mix in the grated Parmesan cheese.
  4. In a bowl whisk two eggs.
  5. Dip each slice of chicken in the tapioca first, then the egg and then press into the almond meal each side.
  6. In a frying pan add ghee.
  7. Fry the chicken till a light golden colour.
  8. Spread 2 Tbs of ghee in an ovenproof pan.
  9. Place the chicken in the pan.
  10. Add the chicken broth, the white wine and the juice of 1-2 lemons.
  11. Cover the pan with aluminum foil.
  12. Bake for 20 mins. Remove the foil for the last 10 mins.
  13. Serve with a drizzle of extra virgin olive oil
