Just another recipe for Biscotti, that I found had a different texture to it once baked. This recipe makes 1 small log. Feel free to double recipe.

  1. 200g (7oz) of almond meal
  2. 1 egg
  3. 40g (1.4oz) of organic coconut sugar
  4. 1/2 tsp vanilla essence
  5. 25g (0.88oz) of whole almonds
  6. 1/2 tsp baking powder
  7. Splash of organic almond milk
  1. Preheat oven to 170 degrees (338F)
  2. Combine all the ingredients together to make a smooth dough.
  3. Shape into a log and place on a baking paper lined log tray, bake for about 15 minutes and remove. Cool for 30 min.
  4. (The log cooks a bit more when you crisp them in the oven a second time see next step)
  5. Cut the log into 1/2 inch slices on the diagonal with a very sharp knife.
  6. Spread slices out on a baking sheet and bake at 150 degrees for 20-25 minutes making sure they don't burn.
  7. Remove from oven and allow to cool, set, and become crispy
  8. Serve with coffee.
