Just another recipe for Biscotti, that I found had a different texture to it once baked. This recipe makes 1 small log. Feel free to double recipe.

Ingredients
- 200g (7oz) of almond meal
- 1 egg
- 40g (1.4oz) of organic coconut sugar
- 1/2 tsp vanilla essence
- 25g (0.88oz) of whole almonds
- 1/2 tsp baking powder
- Splash of organic almond milk
Instructions
- Preheat oven to 170 degrees (338F)
- Combine all the ingredients together to make a smooth dough.
- Shape into a log and place on a baking paper lined log tray, bake for about 15 minutes and remove. Cool for 30 min.
- (The log cooks a bit more when you crisp them in the oven a second time see next step)
- Cut the log into 1/2 inch slices on the diagonal with a very sharp knife.
- Spread slices out on a baking sheet and bake at 150 degrees for 20-25 minutes making sure they don't burn.
- Remove from oven and allow to cool, set, and become crispy
- Serve with coffee.
