Sweet & Savoury Tomato Prawns

Sweet & Savoury Tomato Prawns

Ingredients
  1. 1-2 tbls ghee
  2. 700g raw prawns peeled & deveined
  3. ginger to your liking fresh or powder
  4. 4 garlic cloves crushed
  5. 1 red chilli chopped (optional)
  6. 2 tbls tomato paste (sugar-free)
  7. 400g (0.88 lbs) of peeled tomatoes
  8. 2 tbls fish sauce (sugar-free)
  9. 1 1/2 tbls apple cider vinegar
  10. 1/2 cup of homemade broth (optional)
  11. black pepper
Instructions
  1. Heat the ghee in a large fry pan and sauté prawns for 1-2 mins until they change colour.
  2. Add ginger, garlic, and chilli and fry for 30 seconds.
  3. Stir in paste and cook for 1 minute.
  4. Add the peeled tomatoes, broth, fish sauce and vinegar, bring to the boil on high, reduce heat and simmer till the sauce thickens.
  5. Season with pepper and serve with zoodles or cauliflower rice.
