Moist Paleo Apple Cake

My dad came to visit with bags of apples that he picked from the wild apple trees here in Canberra. They were pure white colour under their skin, and tasted pretty tart. Perfect for an apple cake.

Ingredients
  1. 5 apples
  2. juice of 1 lemon
  3. 1/4 cup of coconut sugar for the apples
  4. 1/2 cup of coconut sugar
  5. 5 free range eggs
  6. 300g almond meal
  7. 1 Tbls coconut flour
  8. 1/3 cup of olive oil
  9. 1/3 cup of melted ghee
  10. 1 tbls cream of tarter
  11. 1/2 tsp baking power
  12. 1/2 tsp tapioca flour
  13. Seeds scraped from 1 vanilla pod or 1 tsp of good vanilla extract
  14. 2 tbls pine nuts
Instructions
  1. Preheat the oven to 170°C/340°F.
  2. Peel the apples and cut them into small thin pieces. Add the lemon juice and 1/4 cup of the coconut sugar. Mix together and set aside.
  3. Break the eggs into a large bowl. Add the 1/2 cup of coconut sugar and beat together well.
  4. Add the melted ghee, oil, cream of tarter, baking powder, tapioca flour, vanilla and almond meal mixing well.
  5. Add the apples and mix through.
  6. Put the mixture in a spring form 22-23 cm round cake tin, sprinkle the pine nuts on top and bake for 35-40 minutes or until a skewer inserted in the centre of the cake comes out clean.
