Veal with Mushroom Glaze

Foods that are healthy and satisfying can be the easiest to make. As long as some love is added.

Ingredients
1 1/2 cup (375mls) homemade beef stock
1/2 garlic clove crushed
8 slices of veal that have been tenderised with a kitchen mallet.
8 medium button mushrooms wiped clean with paper towel and sliced
Tapioca for coating
salt
pepper
ghee for frying

Method
In a frypan cook the garlic with the ghee for 2 minutes, add the sliced mushrooms and salt then stir. Place a lid on the pan and cover for 5 minutes then stir.

Pour the stock into the frypan and let simmer for 10-15 minutes. Season with pepper.

Meanwhile coat each slice of veal with tapioca and dust excess into a bowl. Heat the ghee in another frypan until hot, add the coated veal to the pan and turn after 3 seconds.

When glaze starts to thicken add the partially cooked veal turning to coat and simmer for about 1 minute

Serve hot.
