These succulent ribs will melt in your mouth with lots of flavour, a great weekend meal to pop in the oven and let it do all the work for you.
Slow Roasted Pork Ribs

Ingredients
- 6 free range organic Pork ribs also known as pork belly with the bones intake. Or you could use plain pork belly.
- 6 potatoes peeled and kept whole
- 1 clove of garlic crushed
- 4 sprigs of fresh rosemary, remove stems.
- sea salt
- cracked pepper
- 2 tbls of Ghee melted
Instructions
- Preheat oven 150 degrees (302F). (If you have pork rind on your ribs lay them upright in the pan season the rind and cook them on high at 250 deg (482F) until they are your desired crackleness)
- In a small bowl mix cracked pepper, rosemary, sea salt and garlic in the melted ghee.
- Spread half this mixture into an oven proof rectangle casserole dish, and coat the pork ribs each side in this ghee mixture. Lay in a single layer.
- In a large bowl toss potatoes in the remaining ghee mixture and add potatoes to the dish.
- Place into preheated oven for 2 hours at 150 degrees (302F).
- To have a crispy pork rind, preheat the oven at 250 degrees (482F) place your pork ribs and cook until the rind is crispy to your liking then bring the heat down to 150 degrees (302 F) and slow cook for a further 30-40 minutes.
- Serve with the potatoes.
