Paleo Fig and Almond Cake

Of course when you have been given an abundance of figs you make Fig and Almond cake.

  1. 1 cup almond meal
  2. 1/4 Cup organic coconut sugar, Plus extra 2 Tablespoons
  3. 1/4 Cup of arrowroot flour
  4. 1 Tsp baking powder
  5. 1/2 Tsp Ground Cinnamon
  6. Pinch of Salt
  7. 3 large farm fresh eggs - room temp
  8. 2 Tbls of solidified ghee, melted & cooled but still liquid
  9. 1 Tbls of solidified Organic coconut oil then melted & cooled but still liquid
  10. 7-8 fresh figs
  11. Olive oil for greasing or baking paper
  1. Preheat oven to 180 degrees (356 F) and lightly grease fluted pan with a removable base.
  2. In a bowl, combine the almond meal, coconut sugar, arrowroot flour, baking powder, cinnamon, and salt.
  3. In a large bowl, whisk together the eggs, ghee, and coconut oil.
  4. Add the dry ingredients into the wet ingredients, and whisk just until mixed.
  5. Pour the mixture into the prepared pan.
  6. Wash and slice the top and bottom off the figs (just to take off the core and the end bit)
  7. Arrange the figs cut side up over the mixture in the pan, Sprinkle the remaining 2 tbls of coconut sugar over the figs, then bake for about 25-30 minutes or until the cake is set in the center.
  8. Cool before serving, removing the bottom part of the pan from the sides. By lifting it upwards.
  9. Enjoy!
