Paleo and Almond Fig Cake

Ingredients
- 1 cup almond meal
- 1/4 Cup organic coconut sugar, Plus extra 2 Tablespoons
- 1/4 Cup of arrowroot flour
- 1 Tsp baking powder
- 1/2 Tsp Ground Cinnamon
- Pinch of Salt
- 3 large farm fresh eggs - room temp
- 2 Tbls of solidified ghee, melted & cooled but still liquid
- 1 Tbls of solidified Organic coconut oil then melted & cooled but still liquid
- 7-8 fresh figs
- Olive oil for greasing or baking paper
Instructions
- Preheat oven to 180 degrees (356 F) and lightly grease fluted pan with a removable base.
- In a bowl, combine the almond meal, coconut sugar, arrowroot flour, baking powder, cinnamon, and salt.
- In a large bowl, whisk together the eggs, ghee, and coconut oil.
- Add the dry ingredients into the wet ingredients, and whisk just until mixed.
- Pour the mixture into the prepared pan.
- Wash and slice the top and bottom off the figs (just to take off the core and the end bit)
- Arrange the figs cut side up over the mixture in the pan, Sprinkle the remaining 2 tbls of coconut sugar over the figs, then bake for about 25-30 minutes or until the cake is set in the center.
- Cool before serving, removing the bottom part of the pan from the sides. By lifting it upwards.
