Chicken Thigh with Pizzaiola Sauce

A delicious pizza flavoured sauce to go with your chicken thighs.

Chicken Thigh with Pizzaiola Sauce

Ingredients
  1. 6 free range chicken thighs
  2. 600g (1.32lbs) of peeled organic tomatoes (see my recipe for peeled tomatoes)
  3. tbls ghee
  4. 3 garlic cloves chopped
  5. 1/2 onion chopped
  6. 100g (0.22Lbs) whole black olives (optional)
  7. 1/2 tbls dried oregano
  8. 1 tbls tomato paste
  9. 1/2 cup of homemade chicken broth
  10. sea salt
  11. pepper
Instructions
  1. Melt the ghee in a large frypan and add the chicken thighs to brown, season with sea salt and pepper as you turn them each side. Set aside and keep warm.
  2. In the same frypan with the juices, sauté the onion and garlic, add the oregano and cook until soft.
  3. Pour in the peeled tomatoes, paste and broth and add seasoning. Reduce this to make a nice sauce then add the olives. Add the chicken thighs back to the pan and the juices from the plate where the thighs were sitting. Let the thighs finish cooking in the pan turning them once. Make sure the sauce doesn't start to stick to the bottom of the pan. The sauce should be thick.
  4. Serve immediately with sauce on top.
